Description

These soft and chewy peanut butter cookie bars are a nostalgic school cafeteria classic made with pantry staples. Easy to prepare, rich in flavor, and perfect for sharing or freezing.


Ingredients

  • 1 cup creamy peanut butter

  • 1/2 cup unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar, packed

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 cup all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup quick oats
    Optional: 1/2 cup chocolate chips or chopped peanuts


Instructions

  • Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.

  • Cream butter and both sugars until fluffy.

  • Mix in peanut butter, then eggs and vanilla.

  • In a separate bowl, whisk flour, baking soda, and salt.

  • Combine dry ingredients with wet mixture. Stir in oats and optional add-ins.

  • Spread into prepared pan and smooth the top.

  • Bake for 20–25 minutes or until edges are golden.

  • Cool completely before slicing into bars.

Notes

  • Use room temperature butter for easier creaming.
  • Don’t overmix to keep bars soft.
