Description

Pepperoni Pizza Lasagna Roll Ups are the ultimate comfort food mash-up, combining the cheesy goodness of pizza and the hearty satisfaction of lasagna. These easy-to-make roll ups are filled with creamy ricotta, savory pepperoni, tangy marinara sauce, and gooey mozzarella cheese, all baked to perfection.

  • 12 lasagna noodles (boiled until tender)
  • 2 cups marinara or spaghetti sauce (any flavor)
  • 1 ½ cups ricotta cheese (part-skim or whole)
  • 2 cups mozzarella cheese (shredded)
  • 120 pepperoni slices (about 810 slices per roll-up)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Fresh parsley (optional, for garnish)

Instructions

  • Preheat oven to 350°F (175°C). Lightly spray a 13×9 glass baking dish with cooking spray and spread a thin layer of marinara sauce on the bottom.
  • Cook lasagna noodles according to package instructions, drain, and lay them flat on a clean surface.
  • In a medium bowl, mix ricotta cheese, onion powder, garlic powder, and Italian seasoning until smooth.
  • Spread the ricotta mixture evenly over each lasagna noodle. Add 8-10 pepperoni slices per noodle and roll tightly.
  • Place roll-ups seam-side down in the baking dish. Pour remaining marinara sauce over them and sprinkle with mozzarella cheese.
  • Bake for 15-20 minutes until cheese is melted and bubbly. Broil for 2-3 minutes if desired for a golden top.
  • Garnish with fresh parsley and serve warm.

Notes

  • For a healthier version, use turkey pepperoni and part-skim ricotta cheese.
  • Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
