- 12 lasagna noodles (boiled until tender)
- 2 cups marinara or spaghetti sauce (any flavor)
- 1 ½ cups ricotta cheese (part-skim or whole)
- 2 cups mozzarella cheese (shredded)
- 120 pepperoni slices (about 8–10 slices per roll-up)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C). Lightly spray a 13×9 glass baking dish with cooking spray and spread a thin layer of marinara sauce on the bottom.
- Cook lasagna noodles according to package instructions, drain, and lay them flat on a clean surface.
- In a medium bowl, mix ricotta cheese, onion powder, garlic powder, and Italian seasoning until smooth.
- Spread the ricotta mixture evenly over each lasagna noodle. Add 8-10 pepperoni slices per noodle and roll tightly.
- Place roll-ups seam-side down in the baking dish. Pour remaining marinara sauce over them and sprinkle with mozzarella cheese.
- Bake for 15-20 minutes until cheese is melted and bubbly. Broil for 2-3 minutes if desired for a golden top.
- Garnish with fresh parsley and serve warm.

- For a healthier version, use turkey pepperoni and part-skim ricotta cheese.
