Description

These Rainbow Cake Mix Cookies are soft, chewy, and bursting with vibrant colors. Made with cake mix, they are incredibly easy and fun to bake!


Ingredients

  • 1 box white or vanilla cake mix (15.25 oz)
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • Gel food coloring (red, blue, yellow, green, or any choice)
  • ¼ cup sprinkles (optional)

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix the dough: In a large bowl, combine cake mix, eggs, oil, and vanilla extract. Stir until a soft dough forms.
  • Divide & color: Separate the dough into 4-5 bowls. Add different gel food coloring to each and mix until evenly colored.
  • Shape the cookies: Take small portions of different colored dough, gently roll them together into a ball, and place them on the baking sheet.
  • Bake: Bake for 10-12 minutes or until the edges are set but the centers look slightly underbaked.
  • Cool & enjoy: Let cookies cool for 5 minutes on the sheet before transferring to a wire rack.

Notes

  • Do not overmix the dough; it keeps the cookies soft.
  • Use gel food coloring for vibrant colors without affecting the dough texture.
  • Store in an airtight container with a slice of bread to keep them soft.
