Description

These Salted Brownie Cookies combine the rich, fudgy texture of brownies with the chewiness of cookies. They have a shiny, crackly top and a hint of sea salt to enhance the deep chocolate flavor. Quick, easy, and absolutely delicious!


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ⅛ teaspoon salt
  • 2 large eggs + 1 egg yolk (room temp)
  • 1 cup granulated sugar
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter
  • 1 cup semi-sweet chocolate chips (plus extra for topping)
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon espresso powder (optional)
  • Flaky sea salt (for topping)

Instructions

  • Preheat oven to 350ºF (175ºC) and line baking sheets with parchment paper.
  • In a bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, beat eggs, egg yolk, sugar, oil, and vanilla until frothy.
  • Melt butter and chocolate chips together, then mix in cocoa powder and espresso powder.
  • Pour melted chocolate mixture into the wet ingredients and mix well.
  • Gradually add dry ingredients and mix until just combined.
  • Scoop dough onto baking sheets, spacing 1½ inches apart.
  • Sprinkle flaky sea salt on top and bake for 8-10 minutes.
  • Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • For a deeper chocolate flavor, add espresso powder.
  • Store in an airtight container at room temperature for up to 3 days.
  • To freeze, store in a freezer-safe bag for up to 3 months.
