These Salted Brownie Cookies combine the rich, fudgy texture of brownies with the chewiness of cookies. They have a shiny, crackly top and a hint of sea salt to enhance the deep chocolate flavor. Quick, easy, and absolutely delicious!

- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ⅛ teaspoon salt
- 2 large eggs + 1 egg yolk (room temp)
- 1 cup granulated sugar
- 1 tablespoon vegetable oil
- 1 teaspoon vanilla extract
- 6 tablespoons unsalted butter
- 1 cup semi-sweet chocolate chips (plus extra for topping)
- ¼ cup unsweetened cocoa powder
- 1 teaspoon espresso powder (optional)
- Flaky sea salt (for topping)
Instructions
- Preheat oven to 350ºF (175ºC) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In a large bowl, beat eggs, egg yolk, sugar, oil, and vanilla until frothy.
- Melt butter and chocolate chips together, then mix in cocoa powder and espresso powder.
- Pour melted chocolate mixture into the wet ingredients and mix well.
- Gradually add dry ingredients and mix until just combined.
- Scoop dough onto baking sheets, spacing 1½ inches apart.
- Sprinkle flaky sea salt on top and bake for 8-10 minutes.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- For a deeper chocolate flavor, add espresso powder.
- Store in an airtight container at room temperature for up to 3 days.
- To freeze, store in a freezer-safe bag for up to 3 months.
