Ingredients
For the Chicken
- Chicken Thighs or Breasts: 1 pound (450g), bite-sized pieces
 
For the Vegetables
- Bell Peppers: 1 red and 1 green, chopped

 - Garlic: 3 cloves, minced
 - Fresh Ginger: 1 tablespoon, minced
 - Green Onions: 2, chopped (for garnish)
 
For the Marinade
- Soy Sauce: 1 tablespoon
 - Cornstarch: 1 tablespoon
 - Shaoxing Wine or Dry Sherry: 1 tablespoon
 - Sesame Oil: 1 teaspoon
 
For the Sauce
- Oyster Sauce: 2 tablespoons
 - Soy Sauce: 1 tablespoon
 - Honey: 1 teaspoon
 - Coarsely Ground Black Pepper: 2 teaspoons (adjust to taste)
 - Water or Chicken Broth: 2 tablespoons
 
For Serving
- Cooked Rice: Steamed white or brown rice
 
Instructions
- Marinate the Chicken: Combine soy sauce, cornstarch, Shaoxing wine, and sesame oil in a bowl. Add chicken, mix, and marinate for 15 minutes.
 - Prepare the Sauce: Whisk together oyster sauce, soy sauce, honey, black pepper, and water or broth in a small bowl. Set aside.
 - Cook the Chicken: Heat oil in a skillet or wok over medium-high heat. Sear chicken until browned and nearly cooked through. Remove and set aside.
 - Cook Vegetables: Sauté garlic and ginger in the same pan. Add onions and bell peppers, stir-frying until crisp-tender.
 - Combine and Finish: Return chicken to the pan. Pour sauce over, stirring to coat. Cook for 2–3 minutes until sauce thickens.
 - Serve: Garnish with green onions and serve hot over rice.
