Description

This shrimp scampi recipe is quick, easy, and bursting with flavor! Juicy shrimp are cooked in a garlicky butter sauce with fresh lemon juice for a restaurant-worthy dish that comes together in under 30 minutes. Perfect over pasta, rice, or with crusty bread.


Ingredients

  • 1 lb large shrimp, peeled & deveined
  • 4 tbsp unsalted butter
  • 3 tbsp olive oil
  • 5 cloves garlic, minced
  • ¼ tsp red pepper flakes (optional)
  • ¼ cup low-sodium chicken broth
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, chopped
  • Salt & black pepper to taste

Instructions

  • Pat shrimp dry and season with salt, pepper, and red pepper flakes.
  • Heat olive oil in a skillet over medium-high heat. Add shrimp and cook for 1-2 minutes per side until pink. Remove and set aside.
  • Melt butter in the same skillet. Add garlic and sauté for 30 seconds until fragrant.
  • Pour in chicken broth, lemon juice, and lemon zest. Simmer for 2-3 minutes.
  • Return shrimp to the pan, toss to coat, and cook for 1 minute.
  • Stir in parsley and serve immediately over pasta, rice, or with crusty bread.

Notes

  • Use fresh lemon juice for the best flavor.
  • Double the sauce if serving with pasta.
  • Swap chicken broth for white grape juice for extra sweetness.
