Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 1 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup seafood or chicken stock
  • ½ cup heavy cream
  • ¼ cup cream cheese, softened
  • ½ cup Parmesan cheese, grated
  • 1 tsp dried basil
  • 2 cups fresh spinach, chopped
  • 1 lb cheese tortellini (fresh or frozen)

Instructions

  • Cook the shrimp: Season and sear shrimp in olive oil for 1-2 minutes per side. Remove and set aside.
  • Prepare the garlic sauce: Melt butter, sauté garlic, add flour, then whisk in stock and cream cheese until smooth.
  • Thicken the sauce: Pour in heavy cream, add basil, and simmer for 5 minutes.
  • Cook the tortellini: Boil according to package instructions, then drain.
  • Combine everything: Stir Parmesan into the sauce, then add spinach, shrimp, and tortellini. Toss to coat and serve warm.

Notes

  • Use fresh or frozen shrimp—just make sure to pat dry before cooking.
  • Adjust spice level by adding more red pepper flakes.
