- 1 lb large shrimp, peeled and deveined
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp red pepper flakes (optional)
- 1 tbsp olive oil
- 3 tbsp butter
- 4 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1 cup seafood or chicken stock
- ½ cup heavy cream
- ¼ cup cream cheese, softened
- ½ cup Parmesan cheese, grated
- 1 tsp dried basil
- 2 cups fresh spinach, chopped
- 1 lb cheese tortellini (fresh or frozen)
Instructions
- Cook the shrimp: Season and sear shrimp in olive oil for 1-2 minutes per side. Remove and set aside.
- Prepare the garlic sauce: Melt butter, sauté garlic, add flour, then whisk in stock and cream cheese until smooth.
- Thicken the sauce: Pour in heavy cream, add basil, and simmer for 5 minutes.
- Cook the tortellini: Boil according to package instructions, then drain.
- Combine everything: Stir Parmesan into the sauce, then add spinach, shrimp, and tortellini. Toss to coat and serve warm.
