			- 1 lb ground beef
 - 1 small onion, diced
 - 2 garlic cloves, minced
 - 1 can (10.5 oz) cream of mushroom soup
 - ½ cup milk
 - 1 can (15 oz) kidney beans, drained and rinsed
 - 1 can (10 oz) diced tomatoes with green chilies
 - 1 cup frozen corn
 - 1 tsp chili powder
 - ½ tsp salt
 - ¼ tsp black pepper
 - 4 medium russet potatoes, thinly sliced
 - 1½ cups shredded cheddar cheese
 
Instructions
- In a skillet, brown the ground beef with diced onion and minced garlic. Drain excess fat.
 - In a bowl, mix cream of mushroom soup, milk, chili powder, salt, and pepper.
 - In the slow cooker, layer sliced potatoes, ground beef, beans, tomatoes, corn, and soup mixture. Repeat layers, ending with potatoes on top.
 - Cover and cook on low for 6-7 hours (or high for 3-4 hours).
 - Sprinkle shredded cheese during the last 20 minutes of cooking. Let it melt before serving.

- For a spicier casserole, add jalapeños or hot sauce.
 - Use sweet potatoes for a sweeter twist.
