Description

This Slow Cooker Cowboy Casserole is a hearty, family-friendly meal made with ground beef, potatoes, beans, and cheese. It’s a comforting one-pot recipe that’s perfect for busy weeknights or cozy weekends. Minimal prep, loads of flavor, and super versatile!

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup frozen corn
  • 1 tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 medium russet potatoes, thinly sliced
  • 1½ cups shredded cheddar cheese

Instructions

  • In a skillet, brown the ground beef with diced onion and minced garlic. Drain excess fat.
  • In a bowl, mix cream of mushroom soup, milk, chili powder, salt, and pepper.
  • In the slow cooker, layer sliced potatoes, ground beef, beans, tomatoes, corn, and soup mixture. Repeat layers, ending with potatoes on top.
  • Cover and cook on low for 6-7 hours (or high for 3-4 hours).
  • Sprinkle shredded cheese during the last 20 minutes of cooking. Let it melt before serving.

Notes

  • For a spicier casserole, add jalapeños or hot sauce.
  • Use sweet potatoes for a sweeter twist.
