Description

A warm, cheesy, and hearty casserole made with ground beef, tender potatoes, and a creamy sauce, all cooked to perfection in the slow cooker.


Ingredients

  • 1.5 lbs ground beef (or turkey/chicken)
  • 5 large potatoes, peeled and diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • ½ cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  • Brown ground beef with onion, garlic, and bell pepper. Drain excess fat.
  • Mix soup, milk, salt, black pepper, and paprika in a bowl.
  • Layer half of the potatoes in the slow cooker, followed by half of the beef mixture and half of the soup mixture. Repeat layers.
  • Cover and cook on low for 5-6 hours or high for 3-4 hours until potatoes are tender.
  • Sprinkle shredded cheddar cheese on top, cover, and cook for another 20 minutes until melted.
  • Garnish with fresh parsley and serve warm.

Notes

  • Swap ground beef for ground turkey or chicken for a lighter option.
  • Add corn, peas, or carrots for extra veggies.
  • Use pepper jack cheese for a spicier kick.
