A warm, cheesy, and hearty casserole made with ground beef, tender potatoes, and a creamy sauce, all cooked to perfection in the slow cooker.

- 1.5 lbs ground beef (or turkey/chicken)
- 5 large potatoes, peeled and diced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (10.75 oz) condensed cream of mushroom soup
- ½ cup milk
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon paprika
- 1 cup shredded cheddar cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Brown ground beef with onion, garlic, and bell pepper. Drain excess fat.
- Mix soup, milk, salt, black pepper, and paprika in a bowl.
- Layer half of the potatoes in the slow cooker, followed by half of the beef mixture and half of the soup mixture. Repeat layers.
- Cover and cook on low for 5-6 hours or high for 3-4 hours until potatoes are tender.
- Sprinkle shredded cheddar cheese on top, cover, and cook for another 20 minutes until melted.
- Garnish with fresh parsley and serve warm.
Notes
- Swap ground beef for ground turkey or chicken for a lighter option.
- Add corn, peas, or carrots for extra veggies.
- Use pepper jack cheese for a spicier kick.
