Description

This Slow Cooker Tuscan Chicken Meatballs with Gnocchi is a creamy, comforting, and hearty dish. Juicy chicken meatballs are slow-cooked in a rich, sun-dried tomato and Parmesan sauce, then finished with soft gnocchi and fresh spinach for a satisfying meal.


Ingredients

  • For the Meatballs: Ground chicken, egg, breadcrumbs, onion, sun-dried tomatoes, milk, Parmesan cheese, garlic, Italian seasoning, salt, pepper.
  • For the Sauce & Cooking: Chicken broth, heavy cream, sun-dried tomatoes, Italian seasoning, gnocchi, fresh spinach, Parmesan cheese.

Instructions

  • Mix meatball ingredients, form meatballs, and bake for 15 minutes.
  • Add meatballs to the slow cooker with broth, cream, sun-dried tomatoes, and seasonings.
  • Cook on LOW for 6 hours or HIGH for 3 hours.
  • Add gnocchi and cook for 20 minutes. Stir in spinach and Parmesan before serving.
