For the Gravy:

  • ⅓ cup vegetable oil
  • ½ cup all-purpose flour
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 4 cups chicken stock
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  • Clean and season turkey necks.
  • Brown them in a pot with oil.
  • Make a roux with flour and oil until golden brown.
  • Sauté onions, bell peppers, and celery.
  • Add garlic, thyme, and bay leaf.
  • Pour in chicken stock and add turkey necks.
  • Simmer on low for 2 hours.
  • Uncover and let gravy thicken for 20 minutes.
  • Serve hot over rice or mashed potatoes.
