- ½ tsp black pepper
- 1 tsp Worcestershire sauce
- 1 tsp browning sauce (optional)
- 2 tbsp vegetable oil
For the Gravy:
- ⅓ cup vegetable oil
- ½ cup all-purpose flour
- 1 large onion, diced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 4 cups chicken stock
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Clean and season turkey necks.
- Brown them in a pot with oil.
- Make a roux with flour and oil until golden brown.
- Sauté onions, bell peppers, and celery.
- Add garlic, thyme, and bay leaf.
- Pour in chicken stock and add turkey necks.
- Simmer on low for 2 hours.
- Uncover and let gravy thicken for 20 minutes.
- Serve hot over rice or mashed potatoes.
Notes
- For extra richness, add a splash of Worcestershire sauce to the gravy.
