- ½ cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese

- ½ tsp black pepper
- ¼ tsp crushed red pepper flakes (optional)
Instructions
- Cook spaghetti until al dente. Reserve ½ cup pasta water and drain.
- Heat olive oil in a skillet and sauté garlic for 1 minute.
- Stir in sun-dried tomatoes and cook for 2 minutes.
- Add spinach and cook until wilted.
- Pour in heavy cream and simmer for 2-3 minutes.
- Stir in Parmesan cheese until smooth.
- Toss cooked pasta in the sauce, adding pasta water if needed.
- Season with salt, pepper, and red pepper flakes. Serve hot.
