Description

This creamy, flavorful spaghetti with spinach and sun-dried tomatoes is an easy 30-minute meal. The Parmesan-infused sauce is rich yet balanced, making it perfect for busy weeknights or special occasions.


Ingredients

  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp crushed red pepper flakes (optional)

Instructions

  • Cook spaghetti until al dente. Reserve ½ cup pasta water and drain.
  • Heat olive oil in a skillet and sauté garlic for 1 minute.
  • Stir in sun-dried tomatoes and cook for 2 minutes.
  • Add spinach and cook until wilted.
  • Pour in heavy cream and simmer for 2-3 minutes.
  • Stir in Parmesan cheese until smooth.
  • Toss cooked pasta in the sauce, adding pasta water if needed.
  • Season with salt, pepper, and red pepper flakes. Serve hot.

  • Use oil-packed sun-dried tomatoes for more flavor.
  • Add grilled chicken or shrimp for extra protein.
  • For a lighter version, use half-and-half instead of heavy cream.
