A homemade, crispy, and flavorful spicy potato soft taco recipe that’s budget-friendly, vegan, and easy to prepare. Perfect for meal prep and taco nights.

- 2 large russet potatoes, diced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp cayenne pepper
- 1 tsp salt
- ½ tsp black pepper
- 4 small flour tortillas
- 1 cup shredded lettuce
- ½ cup diced tomatoes
- ½ cup shredded vegan cheese
Chipotle Sauce:
- ½ cup vegan mayo
- 1 tbsp lime juice
- 1 tsp chipotle powder
- ½ tsp garlic powder
Instructions
- Dice potatoes and soak in cold water for 30 minutes. Drain and pat dry.
- Heat olive oil in a pan over medium heat. Add potatoes and cook until crispy, about 12-15 minutes.
- Season with smoked paprika, garlic powder, onion powder, cayenne, salt, and pepper. Stir well.
- Mix vegan mayo, lime juice, chipotle powder, and garlic powder to make the sauce.
- Warm tortillas in a dry skillet.
- Assemble tacos with crispy potatoes, lettuce, tomatoes, cheese, and chipotle sauce. Serve immediately.
Notes
- Adjust the spice level by adding more or less cayenne pepper.
- For extra crunch, bake the potatoes at 425°F (220°C) for 25 minutes, flipping halfway.
- Store leftover potatoes in an airtight container for up to 5 days.
