Description

A homemade, crispy, and flavorful spicy potato soft taco recipe that’s budget-friendly, vegan, and easy to prepare. Perfect for meal prep and taco nights.


Ingredients

  • 2 large russet potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 small flour tortillas
  • 1 cup shredded lettuce
  • ½ cup diced tomatoes
  • ½ cup shredded vegan cheese

Chipotle Sauce:

  • ½ cup vegan mayo
  • 1 tbsp lime juice
  • 1 tsp chipotle powder
  • ½ tsp garlic powder

Instructions

  • Dice potatoes and soak in cold water for 30 minutes. Drain and pat dry.
  • Heat olive oil in a pan over medium heat. Add potatoes and cook until crispy, about 12-15 minutes.
  • Season with smoked paprika, garlic powder, onion powder, cayenne, salt, and pepper. Stir well.
  • Mix vegan mayo, lime juice, chipotle powder, and garlic powder to make the sauce.
  • Warm tortillas in a dry skillet.
  • Assemble tacos with crispy potatoes, lettuce, tomatoes, cheese, and chipotle sauce. Serve immediately.

Notes

  • Adjust the spice level by adding more or less cayenne pepper.
  • For extra crunch, bake the potatoes at 425°F (220°C) for 25 minutes, flipping halfway.
  • Store leftover potatoes in an airtight container for up to 5 days.
