A delicious and easy spinach stuffed chicken breast filled with a creamy mixture of cream cheese, Parmesan, and fresh spinach. This low-carb, high-protein meal is perfect for weeknights and meal prep.

- 4 boneless, skinless chicken breasts
- 1 tbsp olive or avocado oil
- 1 tsp paprika
- 1 tsp salt (divided)
- ¼ tsp garlic powder
- ¼ tsp onion powder
- 4 oz cream cheese (softened)
- ¼ cup grated Parmesan
- 2 tbsp mayonnaise
- 1½ cups fresh spinach (chopped)
- 1 tsp minced garlic
- ½ tsp red pepper flakes (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken with olive oil, paprika, salt, garlic powder, and onion powder.
- Cut a pocket into the side of each chicken breast.
- Mix the filling ingredients (cream cheese, Parmesan, mayo, spinach, garlic, and red pepper flakes).
- Stuff the chicken breasts with the spinach mixture and secure with toothpicks if needed.
- Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
- Let rest for 5 minutes before serving.
Notes
- Use fresh or frozen spinach (thawed and drained).
- Secure the chicken with toothpicks to keep the filling inside.
- For extra flavor, add sun-dried tomatoes or feta to the filling.
