Description

A delicious and easy spinach stuffed chicken breast filled with a creamy mixture of cream cheese, Parmesan, and fresh spinach. This low-carb, high-protein meal is perfect for weeknights and meal prep.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive or avocado oil
  • 1 tsp paprika
  • 1 tsp salt (divided)
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 4 oz cream cheese (softened)
  • ¼ cup grated Parmesan
  • 2 tbsp mayonnaise
  • 1½ cups fresh spinach (chopped)
  • 1 tsp minced garlic
  • ½ tsp red pepper flakes (optional)

Instructions

  • Preheat the oven to 375°F (190°C).
  • Season the chicken with olive oil, paprika, salt, garlic powder, and onion powder.
  • Cut a pocket into the side of each chicken breast.
  • Mix the filling ingredients (cream cheese, Parmesan, mayo, spinach, garlic, and red pepper flakes).
  • Stuff the chicken breasts with the spinach mixture and secure with toothpicks if needed.
  • Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  • Let rest for 5 minutes before serving.

Notes

  • Use fresh or frozen spinach (thawed and drained).
  • Secure the chicken with toothpicks to keep the filling inside.
  • For extra flavor, add sun-dried tomatoes or feta to the filling.
