Ingredients

8 oz cream cheese, softened

1/4 cup granulated sugar

1 tsp vanilla extract

1 cup heavy whipping cream

1 cup fresh strawberries, diced

2 tbsp granulated sugar (for strawberries)

1 1/2 cups crushed shortbread cookies or graham crackers

1/4 cup unsalted butter, melted

6 large crepes

Powdered sugar, for dusting
Instructions

Beat cream cheese, sugar, and vanilla until smooth.

Whip heavy cream to stiff peaks, then fold into the cream cheese mixture.

Combine strawberries with 2 tbsp sugar and let sit 10 minutes.

Mix cookie crumbs with melted butter.

Spread cheesecake filling on crepes, sprinkle crumbs, top with strawberries, and roll tightly.

Wrap each roll in plastic wrap and chill for 1 hour.

Slice and dust with powdered sugar before serving.
