Description

A refreshing and easy no-bake dessert made with soft crepes, fluffy cheesecake filling, juicy strawberries, and buttery cookie crumbs. Perfect for warm weather entertaining or a make-ahead treat.


Ingredients

  • 8 oz cream cheese, softened

  • 1/4 cup granulated sugar

  • 1 tsp vanilla extract

  • 1 cup heavy whipping cream

  • 1 cup fresh strawberries, diced

  • 2 tbsp granulated sugar (for strawberries)

  • 1 1/2 cups crushed shortbread cookies or graham crackers

  • 1/4 cup unsalted butter, melted

  • 6 large crepes

  • Powdered sugar, for dusting


Instructions

  • Beat cream cheese, sugar, and vanilla until smooth.

  • Whip heavy cream to stiff peaks, then fold into the cream cheese mixture.

  • Combine strawberries with 2 tbsp sugar and let sit 10 minutes.

  • Mix cookie crumbs with melted butter.

  • Spread cheesecake filling on crepes, sprinkle crumbs, top with strawberries, and roll tightly.

  • Wrap each roll in plastic wrap and chill for 1 hour.

  • Slice and dust with powdered sugar before serving.

Notes

  • Drain excess liquid from strawberries before adding.
  • Use store-bought crepes for a shortcut.
  • Can be made up to 24 hours in advance.
