- 6 cups fresh spinach
- 1 ½ cups strawberries, sliced
- ½ cup blueberries (optional)
- ½ cup pecans, toasted
- ½ cup feta cheese, crumbled
- 1 cup balsamic vinegar
- ¼ cup honey or brown sugar
Instructions
- In a saucepan, simmer balsamic vinegar and honey over medium heat until reduced by half (10 minutes). Let cool.
- Toast pecans in a dry skillet over medium heat for 3-5 minutes. Set aside.
- In a large bowl, combine spinach, sliced strawberries, blueberries, and feta.
- Sprinkle with toasted pecans and drizzle with balsamic glaze.
- Toss gently and serve immediately.
