Description

A fresh and flavorful salad made with baby spinach, juicy strawberries, toasted pecans, and creamy feta, all drizzled with a homemade balsamic glaze. Perfect as a light meal or a delicious side dish!


Ingredients

  • 6 cups fresh spinach
  • 1 ½ cups strawberries, sliced
  • ½ cup blueberries (optional)
  • ½ cup pecans, toasted
  • ½ cup feta cheese, crumbled
  • 1 cup balsamic vinegar
  • ¼ cup honey or brown sugar

Instructions

  • In a saucepan, simmer balsamic vinegar and honey over medium heat until reduced by half (10 minutes). Let cool.
  • Toast pecans in a dry skillet over medium heat for 3-5 minutes. Set aside.
  • In a large bowl, combine spinach, sliced strawberries, blueberries, and feta.
  • Sprinkle with toasted pecans and drizzle with balsamic glaze.
  • Toss gently and serve immediately.

Notes

  • For extra crunch, add sunflower seeds or walnuts.
  • Store dressing separately to keep the salad fresh.
