Description

These sugar cookie cheesecake bars are a delightful combo of chewy sugar cookie dough and rich, creamy cheesecake. With only 4 main ingredients and minimal prep, they’re the perfect quick dessert for any gathering or weeknight treat.


Ingredients

  • 1 roll refrigerated sugar cookie dough (16.5 oz)

  • 8 oz cream cheese, softened

  • 1 large egg

  • 1 tsp vanilla extract

  • Optional: Sprinkles or powdered sugar for topping


Instructions

  • Preheat oven to 350°F (175°C) and grease or line an 8×8-inch baking dish.

  • In a bowl, beat cream cheese, egg, and vanilla until smooth.

  • Press half of the cookie dough evenly into the bottom of the dish.

  • Pour cream cheese mixture over dough and smooth with a spatula.

  • Break the remaining dough into chunks and scatter on top.

  • Bake for 30 minutes or until golden and set.

  • Let cool for 1 hour before slicing. Chill for firmer bars.

  • Add optional toppings and serve.

Notes

  • Let cream cheese come to room temperature for a smoother batter.
  • Chill after baking for clean slices.
