These sugar cookie cheesecake bars are a delightful combo of chewy sugar cookie dough and rich, creamy cheesecake. With only 4 main ingredients and minimal prep, they’re the perfect quick dessert for any gathering or weeknight treat.
Ingredients

1 roll refrigerated sugar cookie dough (16.5 oz)

8 oz cream cheese, softened

1 large egg

1 tsp vanilla extract

Optional: Sprinkles or powdered sugar for topping
Instructions

Preheat oven to 350°F (175°C) and grease or line an 8×8-inch baking dish.

In a bowl, beat cream cheese, egg, and vanilla until smooth.

Press half of the cookie dough evenly into the bottom of the dish.

Pour cream cheese mixture over dough and smooth with a spatula.

Break the remaining dough into chunks and scatter on top.

Bake for 30 minutes or until golden and set.

Let cool for 1 hour before slicing. Chill for firmer bars.
