Ingredients

6 cups chopped kale leaves

2 ripe peaches, sliced

½ cup crumbled feta cheese

For the Balsamic Vinaigrette:

3 tbsp extra virgin olive oil

1½ tbsp balsamic vinegar

1 tsp Dijon mustard

Salt and pepper to taste
Instructions

Wash, de-stem, and chop the kale. Massage with a little oil and salt until tender.

Add sliced peaches, blueberries, feta, and pecans to the kale.
