Description

A vibrant and nutritious summer salad made with fresh kale, juicy peaches, sweet blueberries, creamy feta, crunchy pecans, and a zesty balsamic vinaigrette. Quick to make and perfect for warm weather meals.


Ingredients

Scale
  • 6 cups chopped kale leaves

  • 2 ripe peaches, sliced

  • 1 cup blueberries

  • ½ cup crumbled feta cheese

  • ½ cup chopped pecans

For the Balsamic Vinaigrette:

  • 3 tbsp extra virgin olive oil

  • 1½ tbsp balsamic vinegar

  • 1 tsp Dijon mustard

  • 1 tsp honey

  • Salt and pepper to taste


Instructions

  • Wash, de-stem, and chop the kale. Massage with a little oil and salt until tender.

  • Add sliced peaches, blueberries, feta, and pecans to the kale.

  • Mix vinaigrette ingredients in a small bowl and whisk until combined.

  • Drizzle over the salad and toss to coat evenly. Serve fresh.
