Sweet and Spicy Honey Pepper Chicken

Description

This bold and flavorful dish pairs sweet and spicy glazed chicken with ultra-creamy macaroni cheese. A comforting, crowd-pleasing dinner in just 40 minutes.

For the Chicken:

  • 2 boneless, skinless chicken breasts

  • Salt and pepper to taste

  • 1 tbsp olive oil

  • ½ cup honey

  • ¼ cup soy sauce

  • 1 tbsp apple cider vinegar

  • 1 tsp ground black pepper

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp ground cayenne pepper

For the Macaroni Cheese:

  • 8 oz macaroni pasta

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 2 cups milk

  • 2 cups shredded sharp cheddar cheese

  • 1 cup shredded mozzarella cheese

  • Salt and pepper to taste

  • Chopped parsley (optional, for garnish)


Instructions

  • Season chicken with salt and pepper. Sear in olive oil for 6–7 mins per side until golden and cooked through. Remove and slice.

  • In the same skillet, add honey, soy sauce, vinegar, pepper, garlic and onion powder, cayenne. Simmer for 2–3 mins until thickened.

  • Return sliced chicken to skillet and coat in sauce.

  • Cook pasta until al dente, drain and set aside.

  • In a saucepan, melt butter, whisk in flour, then slowly add milk. Cook until thickened, remove from heat and stir in cheeses.

  • Combine pasta and cheese sauce. Plate with chicken on top and garnish with parsley.

Notes

  • Adjust cayenne for more or less heat.
  • Substitute gluten-free pasta and flour to make it GF.
  • Use dairy-free cheese and milk to make it dairy-free.
