This Sweet Chili Chicken is tender, juicy, and infused with bold sweet and spicy flavors from a simple marinade. Perfect for grilling or baking, it’s a go-to dish for weeknights, BBQs, or easy meal prep.
Ingredients

1.5 to 2 lbs boneless, skinless chicken breasts or thighs

¼ cup corn oil

3 tbsp apple cider vinegar

¼ cup low-sodium soy sauce

½ cup sweet chili sauce

2 cloves garlic, minced

1 tbsp fresh ginger, grated

Juice of 1 lime

Salt and pepper, to taste
Instructions

Pound chicken to even thickness.

Whisk marinade ingredients in a zip-top bag or bowl.

Add chicken to marinade and refrigerate for at least 2 hours or up to 24 hours.

Grill over medium-high heat for 6–8 minutes per side, or bake at 375°F for 25–30 minutes, until internal temp reaches 165°F.

Let rest for 5 minutes before serving.

- For more heat, add crushed red pepper or a splash of sriracha to the marinade.
