 - 1 cup shredded Monterey Jack cheese
 
Instructions
- Preheat the oven to 400°F and roast sweet potatoes for 60–75 minutes.
 - Cook ground beef, onion, and pepper; season with taco seasoning, salsa, and water. Stir in corn.
 - Slice potatoes, mash flesh, season with salt and pepper, and fill with taco filling. Top with cheese.
 - Bake for 5–10 minutes until cheese melts. Add toppings and serve warm.
