These Taco Ranch Bites are crispy, cheesy, and packed with bold taco flavors. They make the perfect party appetizer, snack, or game-day treat. Made with seasoned ground beef, melted cheddar cheese, and creamy ranch dressing inside crunchy phyllo tart shells, they are easy to make, freezer-friendly, and absolutely delicious!

- 1 lb lean ground beef
- 1 packet (1 oz) taco seasoning
- 1 can (10 oz) diced tomatoes & green chilies, drained
- 2 cups shredded cheddar cheese
- ½ cup ranch dressing
- 30 phyllo tart shells
- Chopped green onions or cilantro for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cook ground beef in a skillet over medium heat until fully browned. Drain excess grease.
- Add taco seasoning and drained tomatoes & chilies to the beef. Simmer for 5 minutes. Let cool slightly.
- Mix the filling: In a bowl, combine the beef mixture, shredded cheddar cheese, and ranch dressing. Stir well.
- Fill the phyllo tart shells with about 1 tablespoon of the beef mixture each.
- Bake for 8-10 minutes (12-13 minutes if frozen) until the cheese melts and the shells turn golden.
- Serve warm and garnish with green onions or cilantro.
Notes
- Make ahead: Assemble and freeze before baking. Bake directly from frozen, adding 2-3 minutes.
- Customizable: Swap beef for turkey, make it vegetarian with beans, or add spice with jalapeños.
