Ingredients

This Teriyaki Chicken and Rice Casserole is a flavorful, nutritious, and easy one-pan meal that brings together tender chicken, wholesome brown rice, vibrant vegetables, and juicy pineapple, all coated in a rich homemade teriyaki sauce. It’s a perfect family-friendly dish for busy weeknights or meal prep.

Instructions

  • Prepare the teriyaki sauce: In a saucepan, combine soy sauce, water, brown sugar, honey, ginger, olive oil, and garlic. Heat over medium until sugar dissolves. Stir in the cornstarch slurry and simmer until thickened.
  • Bake the chicken: Preheat oven to 350°F (175°C). Place chicken breasts in a casserole dish, pour 1 cup of teriyaki sauce over them, and bake for 30-35 minutes. Shred the chicken once fully cooked.
  • Prepare the rice and vegetables: Cook brown rice according to package instructions and steam or cook frozen vegetables until tender.
  • Assemble the casserole: Add shredded chicken, cooked rice, vegetables, and pineapple to the casserole dish. Pour the remaining teriyaki sauce over everything and stir to combine. Bake for an additional 15 minutes.
  • Garnish and serve: Drizzle with extra teriyaki sauce, garnish with green onions and sesame seeds, and enjoy hot.

Notes

  • For a spicy kick, add red pepper flakes or Sriracha.
