			For the Salmon:

- 3 cloves garlic, minced
 - ½ cup sun-dried tomatoes, chopped
 - ½ cup dry white wine (or chicken broth)
 - 1 cup heavy cream
 - ½ cup Parmesan cheese, grated
 - 1 cup fresh spinach
 
Instructions
- Sear the Salmon: Pat salmon dry, season with salt and pepper, then sear in a pan with olive oil and butter for 4-5 minutes per side until golden brown. Remove and set aside.
 - Sauté Garlic and Tomatoes: In the same pan, sauté garlic and sun-dried tomatoes for 30 seconds.
 - Deglaze with Wine: Add white wine or broth, scraping up browned bits. Let simmer for 3-4 minutes.
 - Make the Sauce: Stir in heavy cream and Parmesan, cooking until smooth and creamy.
 - Add Spinach and Salmon: Add spinach, let it wilt, then return salmon to the pan. Simmer for 5 minutes, spooning sauce over the fillets.
 - Serve Hot: Enjoy over pasta, rice, or mashed potatoes.
