For the Salmon:

  • 4 salmon fillets (skin-on or skinless)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Parmesan Cream Sauce:

  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup dry white wine (or chicken broth)
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, grated
  • 1 cup fresh spinach

Instructions

  • Sear the Salmon: Pat salmon dry, season with salt and pepper, then sear in a pan with olive oil and butter for 4-5 minutes per side until golden brown. Remove and set aside.
  • Sauté Garlic and Tomatoes: In the same pan, sauté garlic and sun-dried tomatoes for 30 seconds.
  • Deglaze with Wine: Add white wine or broth, scraping up browned bits. Let simmer for 3-4 minutes.
  • Make the Sauce: Stir in heavy cream and Parmesan, cooking until smooth and creamy.
  • Add Spinach and Salmon: Add spinach, let it wilt, then return salmon to the pan. Simmer for 5 minutes, spooning sauce over the fillets.
  • Serve Hot: Enjoy over pasta, rice, or mashed potatoes.
