Ingredients

2 large English cucumbers (or 4–5 Persian cucumbers), thinly sliced

1/2 medium red onion, thinly sliced

1 cup full-fat Greek yogurt
 - 
1 tablespoon extra virgin olive oil
 - 
1 tablespoon fresh lemon juice
 - 
1 teaspoon lemon zest
 - 
1 clove garlic, finely grated
 - 
2 tablespoons fresh dill, chopped
 - 
1 tablespoon fresh parsley, chopped
 - 
1 teaspoon fresh oregano (or 1/2 teaspoon dried)

Salt and black pepper, to taste
 
Instructions

In a bowl, whisk together yogurt, olive oil, lemon juice, lemon zest, garlic, dill, parsley, oregano, salt, and pepper.

Thinly slice cucumbers and red onion.

Optionally, salt cucumbers and let sit for 10 minutes, then rinse and pat dry.

Toss cucumbers and onion with the dressing until coated.
 - 
Serve immediately or chill for 30 minutes before serving.
