Ingredients

  • 2 large English cucumbers (or 45 Persian cucumbers), thinly sliced

  • 1/2 medium red onion, thinly sliced

  • 1 cup full-fat Greek yogurt

  • 1 tablespoon extra virgin olive oil

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon lemon zest

  • 1 clove garlic, finely grated

  • 2 tablespoons fresh dill, chopped

  • 1 tablespoon fresh parsley, chopped

  • 1 teaspoon fresh oregano (or 1/2 teaspoon dried)

  • Salt and black pepper, to taste


Instructions

  • In a bowl, whisk together yogurt, olive oil, lemon juice, lemon zest, garlic, dill, parsley, oregano, salt, and pepper.

  • Thinly slice cucumbers and red onion.

  • Optionally, salt cucumbers and let sit for 10 minutes, then rinse and pat dry.

  • Toss cucumbers and onion with the dressing until coated.

  • Serve immediately or chill for 30 minutes before serving.
