Ingredients

Scale

For the Dough:

  • 1 packet active dry yeast (2¼ tsp)

  • 1 tbsp sugar (to activate yeast)

  • 1/2 cup lukewarm water (110°F/43°C)

  • 3/4 cup dairy-free milk (lukewarm)

  • 1/4 cup vegetable oil (or melted coconut oil)

  • 1/4 cup sugar

  • 1 tsp salt

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1 tbsp orange zest (about 1 orange)

  • 1 tbsp lemon zest (about 1 lemon)

  • to 4 cups all-purpose flour (plus extra for dusting)

  • 1/2 cup raisins

  • 1/2 cup dried currants

For the Vegan “Egg” Wash:

  • 2 tbsp dairy-free milk

  • 1 tbsp maple syrup

For the Icing (Optional Cross):

  • 1/2 cup powdered sugar

  • 1/2 tsp vanilla extract

  • 2 tsp dairy-free milk

Instructions

  • Activate Yeast: Combine yeast, 1 tbsp sugar, and lukewarm water. Let sit for 10 minutes until foamy.

  • Prepare Dough: Mix dairy-free milk, oil, sugar, salt, spices, and zest. Add yeast mixture and stir. Gradually add flour, kneading for 8-10 minutes by hand or 5 minutes with a mixer.

  • Add Fruits: Fold in raisins and currants.

  • First Rise: Let dough rise in a greased bowl, covered, for 1 hour or until doubled in size.

  • Shape Buns: Divide dough into 12 portions. Roll each into a ball and place on a parchment-lined baking tray.

  • Second Rise: Let buns rise, covered, for 30 minutes until puffy.

  • Bake: Preheat oven to 375°F (190°C). Brush buns with vegan egg wash. Bake for 18-22 minutes until golden brown.

  • Cool & Decorate: Let cool completely before piping icing crosses on top.

Notes

  • For a more traditional approach, you can make the cross using a flour-and-water paste instead of icing.
  • To make ahead, shape buns and refrigerate overnight. Let them come to room temperature before baking.
  • Store buns in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
