1 tbsp maple syrup
For the Icing (Optional Cross):
-
1/2 cup powdered sugar
-
1/2 tsp vanilla extract
-
2 tsp dairy-free milk
Instructions
-
Activate Yeast: Combine yeast, 1 tbsp sugar, and lukewarm water. Let sit for 10 minutes until foamy.
-
Prepare Dough: Mix dairy-free milk, oil, sugar, salt, spices, and zest. Add yeast mixture and stir. Gradually add flour, kneading for 8-10 minutes by hand or 5 minutes with a mixer.
-
Add Fruits: Fold in raisins and currants.
-
First Rise: Let dough rise in a greased bowl, covered, for 1 hour or until doubled in size.
-
Shape Buns: Divide dough into 12 portions. Roll each into a ball and place on a parchment-lined baking tray.
-
Second Rise: Let buns rise, covered, for 30 minutes until puffy.
-
Bake: Preheat oven to 375°F (190°C). Brush buns with vegan egg wash. Bake for 18-22 minutes until golden brown.
-
Cool & Decorate: Let cool completely before piping icing crosses on top.
Notes
- For a more traditional approach, you can make the cross using a flour-and-water paste instead of icing.
- To make ahead, shape buns and refrigerate overnight. Let them come to room temperature before baking.
- Store buns in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
