1. Preheat Oven: Preheat your oven to 375°F (190°C).
2. Prepare the Filling: In a large skillet over medium heat, sauté the diced zucchini, bell peppers, corn, and black beans until the vegetables are tender, about 5-7 minutes.
3. Season the Mixture: Stir in the cumin, chili powder, salt, and pepper. Cook for another minute to allow the spices to develop.
4. Assemble the Enchiladas: Spread a small amount of enchilada sauce on the bottom of a baking dish. Take a tortilla and fill it with a generous scoop of the vegetable mixture. Sprinkle with cheese, then roll it up tightly and place it seam-side down in the baking dish.
