For the Raspberry Syrup:
- 2 cups fresh or frozen raspberries
- ½ cup water
- ⅓ cup granulated sugar
- 1 tablespoon lemon juice

- 8 ounces mascarpone cheese
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 ½ cups heavy whipping cream

- 24–30 ladyfinger cookies (Savoiardi)
- 4 ounces high-quality white chocolate, grated
- Fresh raspberries for garnish (optional)
Instructions
- Prepare Raspberry Syrup: Simmer raspberries, water, sugar, and lemon juice for 10 minutes. Strain and cool.
- Make Mascarpone Filling: Beat mascarpone, sugar, and vanilla. Whip cream separately, then fold into the mascarpone mixture.
- Soak Ladyfingers: Quickly dip ladyfingers in the cooled raspberry syrup and layer them in a dish.
- Assemble Layers: Spread half of the mascarpone mixture, sprinkle grated white chocolate, and repeat with another layer.
- Chill & Serve: Cover and refrigerate for at least 6 hours (preferably overnight). Garnish before serving.
Notes
- Do not oversoak the ladyfingers; a quick dip is enough.
- The dessert is best when chilled overnight.
