Description

    • 2 cups fresh or frozen raspberries
    • ½ cup water
    • ⅓ cup granulated sugar
    • 1 tablespoon lemon juice
  • For the Mascarpone Filling:

    • 8 ounces mascarpone cheese
    • ½ cup granulated sugar
    • 1 teaspoon vanilla extract
    • 1 ½ cups heavy whipping cream
  • For Assembling:

    • 2430 ladyfinger cookies (Savoiardi)
    • 4 ounces high-quality white chocolate, grated
    • Fresh raspberries for garnish (optional)

Instructions

  • Prepare Raspberry Syrup: Simmer raspberries, water, sugar, and lemon juice for 10 minutes. Strain and cool.
  • Make Mascarpone Filling: Beat mascarpone, sugar, and vanilla. Whip cream separately, then fold into the mascarpone mixture.
  • Soak Ladyfingers: Quickly dip ladyfingers in the cooled raspberry syrup and layer them in a dish.
  • Assemble Layers: Spread half of the mascarpone mixture, sprinkle grated white chocolate, and repeat with another layer.
  • Chill & Serve: Cover and refrigerate for at least 6 hours (preferably overnight). Garnish before serving.

Notes

  • Do not oversoak the ladyfingers; a quick dip is enough.
  • The dessert is best when chilled overnight.
