Description

This quick and flavorful Southwest chicken salad features shredded chicken, black beans, corn, tomatoes, and a zesty lime taco dressing. Perfect for lunch, dinner, or meal prep.


Ingredients

  • 2 cups shredded cooked chicken

  • 1 cup canned corn kernels, drained

  • 1 cup canned black beans, rinsed and drained

  • 1 large tomato, diced

  • 1/2 cup chopped red onion

  • 1/4 cup chopped fresh cilantro
    For the Dressing:

  • 1/2 cup mayonnaise

  • 1 tbsp taco seasoning

  • 2 tbsp fresh lime juice

  • Salt and pepper to taste


Instructions

  • In a large bowl, mix chicken, corn, beans, tomato, onion, and cilantro.

  • In a smaller bowl, whisk mayo, taco seasoning, and lime juice until smooth.

  • Pour dressing over the salad and toss to combine.

  • Season with salt and pepper to taste.

  • Serve immediately or chill before serving.
